Swiss Chard is Harvested & White Tail Deer Visit the UPES Garden!

In Pennsylvania, we have white tail deer that run wild through our forests. Our school is in a suburban community surrounded by farms and forests. White Tail Deer are a common sighting in the back of UPES. They are such beautiful animals. Dr. Patschke has even seen them on our playground,  in the evening, at dusk, when no one else was around! 
These cute animals like to fill their stomachs at the UPE garden!
Mrs. Yablonsky found evidence of deer enjoying a late night snack at our garden! This is not good!  Although deer are adorable, the goal of our garden is to feed people, not deer!  We working on a solution!
 
 


The Swiss Chard was harvested today! Mmmmm! The deer didn't find this tasty treat!  Swiss Chard is a green leaf vegetable with a reddish - yellow stalk. A few of the UPE staff members decided to take some Swiss Chard home to eat! Mrs. Ward gave us all a few cooking tips at the end of the day! Mrs. Piland, Mr. Hetrick, and Dr. Patschke were excited to hear about the creative recipes!

Hadley, Contest at White House!


UPES Student, Hadley, entered the Kids' "State Dinner" Contest in Washington, D.C.
 
Michele Obama, the First Lady of the USA (President Obama's wife) , encouraged children in our country to create their own healthy recipes and submit their ideas to a special contest!  

If a child's recipe is selected, they will have a special recognition at a "State Dinner" plus there will be a e-cookbook made with all the winning recipes!  (Global Friends:  This is really cool!!)

 
UPES is PROUD of Hadley for entering the contest!  We hope she obtains the recognition she deserves for making such a creative & healthy food delight!  Good luck in the Washington, DC, challenge!    Hadley's recipe ROCKS!  Congratulations Hadley, for having a voice to help other kids stay happy and healthy!

 


 
 
Roasted Chickpea Salad Pita Pocket

15 ounce can chickpeas, rinsed and drained
1 tablespoon balsamic vinegar
2 tablespoon extra virgin olive oil
¼ teaspoon sea salt
1/8 teaspoon pepper
¾ cup cucumber, peeled and diced
½ cup grape tomatoes, sliced in quarters
6 ounce mozzarella cheese, cubes

lemon wedge
4 whole wheat pitas, cut in half to make pocket
Add avacado slices, snipped parsley or cilantro 
 

Heat the oven to 425 degrees.  Place the chickpeas in large bowl.  Drizzle with olive oil.  Add sea salt and pepper.  Stir until well coated.  Pour into single layer onto large rimmed baking sheet, and bake for 20 minutes, shaking half way through to evenly roast. 

Place back in same bowl; when cooled, add balsamic vinegar, cucumbers, cheese and tomatoes, stir.   Add salt or pepper to taste along with parsley or cilantro.   Top w/squeezed lemon juice.  Spoon into pocket of pita.  Makes 4 servings.  Serve with slice of avocado and glass of milk.  Enjoy!

Hadley's Thoughts:  I have liked chickpeas (garbanzo beans) since I was a little kid. I also like to eat mozzarella cheese w/balsamic vinegar and olive oil. I wanted to make a recipe that was easy to make for lunch without a lot of ingredients, that I could make almost by myself but with my mom’s help. I add a slice of avocado on the side with a glass of 2% milk.

UPES 2013 Art Show!

Upper Providence Elementary has a fantastic Art Program!  All children work with Ms. Winkler, the Art Instructor, from the time they start school in Kindergarten through 4th grade.
 
 
 
Each year, Ms. Winkler proudly displays examples of the student created art projects.

 
Our parents are invited to take a "gallery walk" in our school!  UPE hosts a special open house evening for all to visit.

Pastelitos

 PASTELITOS
 

INGREDIENTES:

MASA: 150 GR DE GRASA, AGUA 250 CC, SAL A GUSTO, 500 GR DE HARINA, JUGO DE LIMÓN, COCO RALLADO.

RELLENO: 250 GR DE DULCE DE MEMBRILLO O BATATA, GRASA O ACEITE PARA FREIR.

PREPARACIÓN: EN UN RECIPIENTE MEZCLAR LA HARINA. EN OTRO RECIPIENTE, DISOLVER LA SAL Y EL JUGO DE LIMÓN EN EL AGUA E INCORPORAR A LA PREPARACIÓN ANTERIOR JUNTO A LA GRASA. MEZCLAR HASTA QUE LA MASA QUEDE SUAVE Y HOMOGÉNEA.
DAR 5 O 6 VUELTAS DE SOBADORA O PALOTE, AGREGANDO HARINA EN CADA VUELTA. TAPAR LA MASA Y DEJARLA REPOSAR POR 30 ,MINUTOS EN UN LUGAR FRESCO.
REFINAR HASTA DEJAR LA MASA CON UN ESPESOR ALGO MENOR A 2 MM. CORTAR 24 TAPAS CON MOLDE APROPIADO. GUARDAR LAS TAPAS ESPOLVOREADAS CON HARINA Y SEPARADAS CON FILM EN LA HELADERA.

Groundhog is still at it!

We noticed the leaves on the turnip plants were all gone this morning!

 
This is what a groundhog looks like! 
 
Groundhogs are herbivorous.  They primarily eat wild grasses and other vegetation, including berries.  Sometimes these furry rodents will also eat insects, snails, slugs, and other bugs.
